Golden Glory Knots

Soften – 2 pkgs. dry yeast
              ¼ cup warm water
              1Tablespoon Sugar
Combine – in mixing bowl and stir
              ½ cup sugar
              ½ cup margarine or butter
              2 tsps. Salt   
              ¾ cup scalded milk
Blend in – 3 unbeaten eggs
              1 cup cooked mashed carrots
              the softened yeast
Beat until smooth
Add gradually – 6 to 7 cups flour to form a stiff dough beating well after each addition
Toss – on floured surface 20 times – place in greased bowl. Cover.
Let rise until doubled  (1 Hour)
Roll out half the dough to a rectangle, spread half with melted butter, fold dough over butter. Cut in 1” strips. Tie strips in loose knots. Pat tops with more melted butter.

There were no baking instructions with this recipe but I think 350 or 375 for 20 minutes.
