Cashew Burgers


  • 1 med. onion coarsely chopped
  • 1 cup cashews
  • 1 cup old fashioned oatmeal
  • 2 tablespoons Tahini
  • 1¼ teaspoon chili powder
  • Salt and ground pepper
  • Canola oil for frying

In a food processor add onion and process until finely ground. Add cashews and oats pulse to coarsely chop, add Tahiti and chili powder. Add egg process but be careful not to chop too finely.  If mixture seems dry add water or stock till moist but not loose.

Make into patties and refrigerate at least 30 minutes to let the oats absorb moisture. Fry in canola oil until golden brown.

Above is the original recipe. I made the burgers for lunch recently and here are some changes I made. I added:

  • cup sunflower seeds
  • 2 tablespoons of peanut butter because I had no Tahini
  • 2 tablespoons of fresh parsley
  • 1 teaspoon cumin
  • 1 carrot chopped with the onion
