macaroni and cheeseCream Sauce with Ham and Peas over Pasta

  • 1 cup or more leftover ham cut into small sticks
  • 1 Tbs. olive oil
  • ½ med. onion chopped fine
  • 1 garlic clove, minced
  • ½ tsp. red pepper flakes or to taste
  • 1/3 cup white wine
  • ¾ cup chicken broth
  • 1 cup heavy cream, (or Half & Half)
  • 2 cups fresh or frozen peas
  • ½ cup grated parmesan cheese
  • Cooked pasta

Sauté onion until soft, 3-5 minutes, add ham, add garlic and red pepper if using and cook for about 30 seconds. Add wine and simmer until almost evaporated, 1-2 minutes. Add broth and cream; simmer until sauce reaches consistency of light cream, 6-9 minutes, add peas and cook for about 2 minutes. Remove from heat and stir in parmesan cheese, season with salt and pepper.

Pour over your favorite cooked pasta.
